Jerusalem Artichoke Soup
Jerusalem Artichokes are rich in iron to give you energy as well as potassium and vitamin B1. They support muscles and nerves and are rich in the soluble fibre Inulin which is a prebiotic and balances blood sugar levels.
400g Jerusalem artichokes, cleaned and cubed
1 onion, chopped
1 carrot, chopped
1 celery stalk, chopped
1 clove garlic
1 bay leaf
Salt and pepper to taste
1.5 litres vegetable stock
- Gently fry the onions, celery and carrot in a dash of oil.
- Add the Jerusalem artichokes, vegetable stock and bay leaf and simmer for approx. 50 mins or until the artichokes are soft.
- Remove the bay leaf, blend and season to taste.
