Rocket salad

Rocket (or arugula if you’re following an American recipe) is one of my favourite leaves. Its sharp, peppery leaves are the perfect foil for a simple salad. It’s a great base for any salad and can be mixed with so many different things. I like tossing it together with the parmesan, cherry tomatoes, red onion, pine nuts and balsamic for the ideal side salad to pretty much any barbecue dish. If you want to add an extra element you can throw in some torn mozzarella to make it a main course salad:

Rocket Pesto dressing

A new twist on pesto in which you simply replace the basil with rocket, giving a peppery hit that’s perfect drizzled over chicken or fish, or over a summer salad.

Ingredients

50g pine nuts

100g rocket

50g parmesan

150ml olive oil

1 garlic clove

Directions

Put everything in a blender and whizz to a paste then season to taste.
