This makes a great addition to any salad, or simply use to spice up a grilled chicken breast or baked fish.


  • 1 dried ancho chilli

  • 6 tomatoes, seeded and diced

  • 4 spring onions, green part only, finely chopped

  • 1 red chilli, diced

  • 1 bunch coriander, washed and chopped

  • 1 lime, zested and juiced

  • 2 tbsp olive oil

  • Salt & pepper


1. Rehydrate the ancho chilli by placing it in a bowl and pouring boiling over it. Soak for 10-15 minutes. Drain and then chop.

2. Place the ancho chilli, tomatoes, spring onions, red chilli, coriander, lime juice, zest and olive oil in a large bowl.

3. Stir to combine.

4. Taste and season with salt and pepper.
