Watercress Soup
Watercress adds a peppery taste to any dish and is highly nutritious, being rich in vitamins A, C and E as well as a good source of iron, calcium and folate. Add to salads or try this delicious soup
Ingredients
2 bags watercress
1 small onion
1 clove garlic
2 potatoes, peeled and chopped
400ml vegetable stock
Olive oil
Method
1. Heat a little olive in a large pan and saute the onion, garlic and potatoes.
2. Add the stock and simmer until the potato is soft
3. Add the watercress and simmer for approx. 3 minutes
