Aubergine, Courgette and Tomato Gratin
Aubergines are a fabulous source of fibre, B vitamins and powerful phytonutrients
Our family favourite at the moment is this aubergine, courgette and tomato gratin which is so simple to make.
Method
1. Preheat the oven to 180C
2. Add sliced aubergine, courgette and tomatoes to an ovenproof dish
3. Pour over some olive oil
4. Sprinkle with mixed herbs, sea salt and pepper
5. Top with crumbled feta and bake for approximately 45 minutes.
